A Good Question from a "Sister" Camp
Q. - "I was wondering if you knew of or had any resources to start a Food Services Manual that we could keep on file for this summer and future kitchen staff."
A. - From Patti: Thanks for your email. You have a good question!! Our Head Cook suggested that you might start with the Health Department to get the "official" document they give out. I've attached a link to the Day and Residential Camp Guidelines – Food Service Program. It gives some good info. http://www.ontariocamps.ca/documents/parents/food06.pdf and FOOD SERVICE RELEVANT REGULATIONS AND RESOURCES http://www.ontariocamps.ca/documents/parents/Food%20Final.pdf. Hope this helps. (**These are for Ontario but I'm sure all other provinces have similar resources.)
To all Camps - If you have your own Food Services Manual that you would be willing to share (or parts of) perhaps we can put something together in the fall for camps to use as a resource in creating their own Manuals. Please email patti@rockyridgeranch.org Thanks!!
This page is designed for those involved in food services. The goal is to have a resource offer those who manage food in any capacity, and to be a forum for expressing insights, recipes, resources, and links that may be helpful for managing the food services for a camp or conference center. The contact person for this page is Patti Chapman from Rocky Ridge Ranch in Ontario. If you have recipes, insights, articles or links that you think others could benefit, contact her at patti@rockyridgeranch.org.

Cooking as a Programming Activitiy
With the rise of the cooking channel, and our obsession with food, there is an increased desire to watch, learn, and explore the world of cooking. Some camps have even introduced it into their summer programming. Whether for youth, teen or adult learning, the art of cooking is a great way to teach life skills and minister at the same time.
I have been intrigued by Muskoka Woods, a camp in Ontario, which has developed a culinary program and has cooking as one of its most popular programming activities designed for aspiring young chefs. The program includes cooking basics, knife skills, soups and salad prep, grilling, presentation, main courses, desserts and more.
Introducing a culinary program to your camp may be a window to ministry to a whole new generation.
